I've built a few AR-15s. SoL is an excellent company with some people who don't like their social media presence or something like that. They make excellent firearms and I would say they are upper mid grade. Barrel is fine. For $800 this would be a terrible deal. For $499, yeah, it's a pretty good. Just make sure to either brace it or pin-and-weld a muzzle device.
Why would you want this over a PSA? YMMV but I personally would not do a PSA-branded gun for anything but a range toy. It's just a QC thing. Aero is good lower mid grade and you can build a perfectly functional rifle with Aero.
AR-15s are a lot like a lot of things: the premium that you are paying for for Knight's or whatever are important because people either want that name (which is totally fine) or are higher-level shooters that actually can tell the difference between a $1k gun and a $3k gun (which is also totally fine). 70% of people could buy/build a PSA/Aero and never regret it or have an issue. I would say the same is true for 90% of people with SoL, 95% w/ DD/BCM, and 99% with Knights/LMT.
I think you could buy this and not regret it in the future if, as you put it, you're a "well-researched noob." I have an old Colt Trooper that a lot of people would consider lower mid-grade: I would trust my life to that gun and it's probably not as nice as something you could realistically build with this.
Don't listen to me though. I say skip all that and just buy a IWI X95. I can carry one of my kids with one hand, deploy that rifle with the other, and it doesn't get in the way of my nods. All in a 26.1" package.
Thanks for the feedback! I'm also wondering about resale value, cus if it doesn't seem that popular now, surely it's worth less if i decide i want to sell it for an IWI x95 (which is a bit out of my budget presently). I have my first purchase under my belt, but it took months and I'm not sure about resale, but I'm happy with quality and function with my Oden Works. It was on clearance and it had some of the better quality parts that the higher end products feature. The problem is that I also purchased a Sharps Bros lower receiver and Faxon chrome lined barrel, so naturally I need to finish that off before calling it good for awhile! I've watched deals like that DD at Brownells and BCM blems go by struggling to want to shell out that kind of money even though they were both great deals. This one mainly has me hesitant, because I know very little about Expo or whether this collab cheapens this gun overall. I do have a chrome Expo BCG though, so this seems like it would be pretty perfect. I guess i'm wanting something a bit different than what i have, cerakote, .300, just something different to top the "hellraiser" lower. I did see those PSA Sabre's that have some pretty good quality pieces along with a pin and welded muzzle device for this same price. There is just too many choices. When the winds shift I'd be lucky to get a BC for these prices probably, but for now i can be picky. Thanks again! I'm more confident now that somebody else has looked over this deal, and this is likely my huckleberry.

Can anyone tell me why this hasn't gotten more action, upvotes, etc? I'm a well researched newb and everything I've come to know says this is a pretty good deal, but I've been hesitant based on the lack of upvotes and action. Whereas I've had other deals that hit and they will sell out while I'm in the check out process, so anyone who reads this, what gives? Why wouldn't I take this over a PSA upper all day? Wouldn't I want this over an Aero? I have a Expo BCG, Sharps Bros Lower, and/or/not a chrome-lined Faxon barrel waiting for an upper to Jerry Mcguire complete them. I probably should've sucked it up and gone DD with that last Brownell's offer. Anyway, any offered feedback would be great!
