Although I do like all the Taurus PT111 G2 pistols I own and have owned, I am not sure what makes the G3 worth a $100 more than the G2 version? I have bought many G2's for $200 when sales come around. It may be just the whole demand thing and panic buying but I dont know. Is there anyone who owns both the G2 and the G3 that would like to enlighten me on the differences and or improvements? thanks

This is the newer model, full size G3 with 17 round capacity, 4 inch barrel and a (supposedly) improved trigger. Plus this is a stainless steel slide version. That's gonna cost more than the older 12+1 G2C compact, if you can even find one in stock. As you mentioned, the pandemic, riots, upcoming election and good ol' supply and demand are all working to drive guns and ammo prices up. The blued G2C hasn't been on sale anywhere for $200 for quite a few months and I suspect it won't be that cheap again for a long time. Right now you are looking around $280+ for a G2C and around $320+ for a G3 when you can find them. The list of 9mm pistols under $300 is getting shorter and shorter.
